Cheesy Pasta Bake

Serves 4. A recipe by Marie McColl

  • 3 cups spiral noodles, cooked
  • 1 pkt chicken and leek soup (or your favourite soup)
  • 3/4 cup grated tasty cheese
  • 2 1/2 cups milk

Combine soup and milk in a saucepan stirring until boiling. Combine with noodles and season with sea salt and pepper. Pour into casserole dish and sprinkle with cheese.
Bake in a 180C oven for 20 minutes.

 


Pesto Lamb

Serves 2. A great little creation of Rachael's inspired by her local butcher

  • 4 lamb cutlets
  • 2tbs. basil pesto
  • 1tsp. finely grated lemon rind
  • 3tbs. butter

Preheat oven to 180C. Combine basil pesto, lemon ring and butter. Place each cutlet in an envelope of alfoil and dollop a tbs. of mixture on top of all the cutlets. Fold the alfoil to seal firmly and cook for 30 minutes.

Optional: Substitute basil pesto and lemon rind with 4 tbs. garlic flavoured pasta sauce and some parmesan cheese. 
  






Vanilla Slice

A s.c.r.u.m.p.t.i.o.u.s recipe from the delightful Val Savage.

  • 1 pkt lattice biscuits
  • 600ml cream
  • 1 pkt vanilla instant pudding 

Place a layer of biscuits on the bottom of a baking dish. Mix cream and pudding together until thick, pour onto biscuit base and top with another layer of lattice biscuits.

Optional: When in season, add 2 fresh mangoes peeled and sliced to the mixture. Top with the following icing.
 


Banana and Strawberry Smoothie

Recipe by dynamic Nutritionist Cyndi O'Meara

  • 1 cup milk (or natural yoghurt)
  • 1 banana
  • 6 strawberries
  • 1 tbs. honey

Put all ingredients into a blender and mix until smooth. Pour into a chilled glass and drink!
  

Tempting Mini-Pizzas

Makes 12 really tasty mini pizzas

  • 1 Sheet of puff pastry
  • 2tbs. pizza sauce
  • 250g tub antipasto mix
  • 100g feta

Using a scone cutter, cut 12 rounds into puff pastry. Place on a baking paper lined baking tray and brush with pizza sauce. Distribute evenly the antipasto mix and top with a slice of feta. Place in 180C oven for 15 minutes. Serve warm.

Optional: Substitute pizza sauce with basil pesto, or mix both for an interesting change. Top with whatever you like. .
 




Feta Dip

Makes one cup and is really, really tasty.

  • 200g Feta
  • ¼ cup olive oil
  • 1 garlic clove, crushed
  • ¼ cup milk 

Place feta, oil and garlic into a food processor and blend until combined. Whilst still processing,gently add milk in a slow stream and mix until a smooth paste forms. Chill before serving.

Optional: Serve with melba toast or your favourite cracker.
 


Beef Stir Fry

  • Serves 4
  • 500g stir fry beef
  • ⅔ cup GF bbq sauce
  • 2 tbs. sesame oil
  • 4 - 6 shallots, chopped

Mixstir-fry sauce and meat together; allow meat to stand for 15 minutes.Heat oil in a wok or frying pan. Stir-fry meat in batches for 1 minute,or until cooked on the outside and medium on the inside. Trim theshallots and cut into thin lengthwise strips. Quickly stir-fry in wok.Serve meat on top of a salad (even just shredded ice-berg lettuce isnice) and top with shallots and jus.

Hint:  Don’t cook meat as it comes straight from the refrigerator. It will be far more tender if restored to room temperature first.
